Maxima Squash and Apple Soup

Ingredients
- 3 tbsp of olive oil
- 1 maxima squash cut into pieces (600 gr)
- 2 carrots cut into large pieces
- 1 onion coarsely chopped
- 1 leek (white part onlcoarsely chopped
- 3 cloves garlic crushed
- 3 apples cut into pieces
- 2 potatoes cut into pieces
- 3 sprigs fresh thyme
- 5 cups of boiling water
- 1/2 apple cut into thin slices
- sea salt and black pepper from the mill
Instructions
- In a large saucepan, heat 2 tbsp of olive oil over medium heat. Fry all ingredients except water and apple slices for 5 minutes.
- Pour in the boiling water and simmer for 20 minutes or until the vegetables are cooked (remove the sprigs of thyme). Puree in the blender. Salt and pepper.
- When serving, garnish each bowl with apple slices and a dash of remaining olive oil.
