In a large saucepan, heat 2 tbsp of olive oil over medium heat. Fry all ingredients except water and apple slices for 5 minutes.
Pour in the boiling water and simmer for 20 minutes or until the vegetables are cooked (remove the sprigs of thyme). Puree in the blender. Salt and pepper.
When serving, garnish each bowl with apple slices and a dash of remaining olive oil.
