Maxima Squash and Apple Soup

Ingredients

  • 3 tbsp of olive oil
  • 1 maxima squash cut into pieces (600 gr)
  • 2 carrots cut into large pieces
  • 1 onion coarsely chopped
  • 1 leek (white part onlcoarsely chopped
  • 3 cloves garlic crushed
  • 3 apples cut into pieces
  • 2 potatoes cut into pieces
  • 3 sprigs fresh thyme
  • 5 cups of boiling water
  • 1/2 apple cut into thin slices
  • sea salt and black pepper from the mill

Instructions

  • In a large saucepan, heat 2 tbsp of olive oil over medium heat. Fry all ingredients except water and apple slices for 5 minutes.
  • Pour in the boiling water and simmer for 20 minutes or until the vegetables are cooked (remove the sprigs of thyme). Puree in the blender. Salt and pepper.
  • When serving, garnish each bowl with apple slices and a dash of remaining olive oil.
