Costata Romanesco Cake by Ginette
Preparation: 30 min.
Ingredients
- 2 1/2 cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. clove
- 1 1/3 cups sugar
- 1/2 cup Crisco oil
- 1/2 cup orange juice
- 4 eggs small if not 3 large
- 1 tsp. vanilla
- 2 cups oj Costata Romanesco
- 1/2 cup light grapes
- Mini chocolate chips Chipits on top (to taste)
Instructions
- Grease and flour 2 round 9 ”molds or a round 9¨ or rectangular 13¨X9¨ mold
- Preheat the oven to 350 F.
- Grate the Costatas
- Combine flour, baking soda, baking powder, salt, cinnamon and cloves
- Put the oil in a large bowl
- Add the sugar gradually, beating quickly.
- In a small bowl, beat the eggs with a mixer until a pale color is obtained
- Add the beaten eggs, orange juice and vanilla to the oil and sugar mixture.
- Gradually add the dry ingredients to the mixture of oil, sugar and eggs. Mix so that everything is well combined.
- Add the Costata and raisins. Mix well with a large spatula.
- Pour into the chosen molds.
- Cook for 60 to 65 min. in a rectangular mold.
- Cook for 50 to 55 min. in round dishes.
- Cool 20 min. before unmolding.
