Squash Soup with Honeydew Melon

Ingredients

  • 1 tbsp vegetable oil
  • 2 tbsp diced onion)
  • 2 tbsp diced carrots
  • 2 tbsp diced celery
  • 1/2 cup diced Pepo squash
  • 3/4 cup diced acorn squash
  • 2 1/2 cups chicken broth
  • 1/3 cup sliced sweet potatoes
  • 1/2 cup diced honeydew melon
  • 1 clove of garlic minced
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Garnish

  • 3 tbsp honey
  • 1 tsp. grated fresh ginger
  • 1 tbsp natural yogurt 0%

Instructions

  • In a saucepan, heat the oil.
  • Add the onions, carrots, celery and squash.
  • Sweat the vegetables for 5 minutes.
  • Add chicken broth, sweet potatoes, honeydew melon and garlic and bring to a boil.
  • Salt and pepper.
  • Reduce heat and cook covered for 30 minutes.
  • Blend until smooth. Set aside
  • In a small saucepan, heat the honey and ginger on low heat.
  • Serve the soup and garnish with a little yogurt and honey coulis.
