Squash Soup with Honeydew Melon
Ingredients
- 1 tbsp vegetable oil
- 2 tbsp diced onion)
- 2 tbsp diced carrots
- 2 tbsp diced celery
- 1/2 cup diced Pepo squash
- 3/4 cup diced acorn squash
- 2 1/2 cups chicken broth
- 1/3 cup sliced sweet potatoes
- 1/2 cup diced honeydew melon
- 1 clove of garlic minced
- 1/4 tsp. salt
- 1/8 tsp. pepper
Garnish
- 3 tbsp honey
- 1 tsp. grated fresh ginger
- 1 tbsp natural yogurt 0%
Instructions
- In a saucepan, heat the oil.
- Add the onions, carrots, celery and squash.
- Sweat the vegetables for 5 minutes.
- Add chicken broth, sweet potatoes, honeydew melon and garlic and bring to a boil.
- Salt and pepper.
- Reduce heat and cook covered for 30 minutes.
- Blend until smooth. Set aside
- In a small saucepan, heat the honey and ginger on low heat.
- Serve the soup and garnish with a little yogurt and honey coulis.
